Recipe carrot pancakes
I have the On The Go book from Rens Kroes and I love her recipes. When I put out the carrot pancakes on my instagram, I got so many requests for the recipe, so here it comes! I made some small changes to the original recipe.
Ingredients
1tbsp chia seeds, welled in 50ml of water
135g grated carrots
50g chopped walnuts
230ml almond milk
1tbsp melted coconut oil
2tsp cinnamon
2tsp baking powder
pinch of salt
160g flour of choice (I used quinoa flou)
1tsp unsweetened vanilla powder
Let’s get started
If you have done all necessary preparations; well the chia seeds, grate the carrots, chop the walnuts and melt the coconut oil, you can mix all ingredients into a nice batter. Leave the batter for 10 minutes and bake a stack of medium sized pancakes. I made three (really big) portions of 3 pancakes out of this recipe. Because you use some coconut oil in the batter, you will not have to use oil to bake.
Serving tips
I honestly love sweet pancakes and these are not sweet. They are savory and very nutritious. My preference is to serve them with something sweet like (frozen) fruit, honey or for example 0 kcal syrup. Besides that, they are delicious with some yoghurt or you can even make home made chocolate sauce. Mix 200g of dates with 75ml water, 2tbsp raw cacao, a pinch of salt and some unsweetened vanilla powder until you get a creamy sauce. If you think this is too much, put some of it into the freezer and save for later. Enjoy!
