Recipe: Leftover Chicken Buddha Bowl
Leftovers! What to do with them? I try to throw away as little as possible and the easiest thing to get rid of your leftovers is… to make a Buddha Bowl! I will share a recipe for a Chicken Buddha Bowl full of protein and extra tasty because of the Nando’s garlic sauce I have used. Yummm…
So I recently received a box full of all the new Nando’s sauces (from the restaurants, how cool?!) and I am testing them out one by one. I am a huge fan of garlic so I have used that one for my Buddha Bowl. But you can practically use any of them to spice up your meal!
What do you need (2p.)
- 100-150 grams of lentils (I used brown lentils)
- 200g chicken
- Chicken herbs
- Olive oil
- Nando’s Peri Peri Garlic Sauce
- Your leftover veggies! I have used:
- Red Onion
How to make it:
Cook the lentils. Depending on which kind you have it will take between 15-45 minuted. Cut the chicken and fry with some chicken herbs in a bit of oil until brown. Cut all your leftover veggies in pieces. Put the lentils in a bowl, and add the chicken and you veggies. Pour your favorite Nando’s sauce on top. I used the Peri Peri Garlic Sauce and the Original Perinaise.
