Recipe: Healthy snickers pie

Eat this healthy snickers pie without any guilt

You might already know that I love candy and especially chocolate. If you don’t want to eat too much candy, try to make is easier to choose for something more healthy. You can for example use pure chocolate (over 70%) instead of milk and white chocolate. I recently made this healthy snickers pie and it was soooo good! My teammates liked it as well. Enjoy without any guilt!

Measurements depend on how big the baking form is and how much you would like to make. You can adjust everything and make for example one big cake or several small ones (like the original).

What do you need?

+/- 45 nuts; for example hazelnuts, cashewnuts, walnuts, almonds.

5,5 tbsp Coconut oil

2 tbsp (crunchy) peanutbutter

1,5 tbsp cacao powder

40 g Pure chocolate (minimum 70%)

8  Medjoul Dates

70 ml water

2 tsp cinnamon, vanilla- or cookie spices (or a mix of these)

First layer:

Mix 4 dates with 3tsp coconut oil. Add the nuts and mix until sticky. The nuts may be a little bit crunchy. I fit is not stickty enough, add some dates. Put the mixture in a baking form and put it in the freezer for 20 minutes.

Middle layer:

Mix 4 dates with the water, peanutbutter, 1 tsp coconut oil and 2tsp spices. Add some extra water if it doesn’t mix well enough or add some extra dates if it is too watery. Put the mixture on top of the first layer and put it in the freezer for 1,5 hours until hardened.

Final layer:

Melt the chocolate with the cacao powder and 1,5 tbsp coconut oil. Let it chill and thicken a little bit and put it on top of the other layers. Put in the freezer until hardened (approximately half an hour).
